Jamie and I met a few months ago at an open house. My husband and I were out on a walk in our neighborhood with our baby and we toured one of the homes that Jamie was showing that day. During conversation we found out that we are in fact neighbors and live just down the road from each other. I love our neighborhood– everyone is so sweet and we have so many new moms, and lots of boy moms! 🙂
As we connected on Instagram post meet, we discovered that we both blog too. It’s so neat to have a blogging friend that understands all the work-from-home-boy-mom struggles right down the road!! Life is full throttle and constant energy → ie my work is from 4/5am to 8am and then I’m 100% mom until nap time.
Well, that’s what happens in my head on an ideal day… which like hardly ever happens. Because my 10 month old baby doesn’t sleep so I end up nursing him all.night.long. And wake up just begging for ICED COFFEEEE. The struggle is real over here ya’ll. So when Jamie asked me to guest post for her while she was out on vacay. I’m like… of course I’ll help out my sweet boy mama blogger neighbor friend.
It’s peach season and I’m trying to gobble up all the peaches I can get my hands on. Those juicy, plump and fragrant peaches that you can find at the Farmer’s Market are so yum right now. My peach obsession lead me to this recipe for Naturally Sweetened Peach Parfaits that I made over on my blog. I love making up these peach parfaits in mason jars for a quick make ahead grab and go breakfast. Just in time for back to school season, right? (How is it possible it’s already mid August??)

Naturally Sweetened Peach Parfaits
Makes 2 parfaits
INGREDIENTS
2 peaches, pitted
1 Medjool date, pitted
½ cup 2% plain Greek yogurt
½ cup low sugar granola
¼ teaspoon vanilla extract
DIRECTIONS

In a food processor or blender, pulse the date and one peach together until finely chopped.

Fold peach mixture into Greek yogurt to combine and stir in vanilla extract.

Slice remaining peach into chunks.

In small ramekin or mason jar, layer granola, sliced peaches, yogurt; repeat.
- If meal prepping, store with lid in refrigerator until ready to eat.
